Meringue cookies

4 large egg whites 1/4 tsp. cream of tartar 1/4 tsp. salt 1 1/2 cups
sugar 1 Tbsp vanilla extract

Beat the egg whites and cream of tartar until they hold soft peaks.

Add the salt.

While beating at a high speed gradually add the sugar to incorporate.

Add the vanilla.

Beat at high speed until the mixture holds very stiff peaks.

Drop by teaspoonfuls onto greased or non-stick baking sheets. They do not
need much space between them, as they do not rise.

Bake them in a 200 degree oven for three hours. Cool before storing.
